Description

This Heritage Grilled Chicken dish combines tender, skin-on chicken breasts with a vibrant Mediterranean flavor profile. The chicken is marinated in white wine, olive oil, and fresh herbs, then grilled to perfection for a smoky char. It is paired with a luscious tomato sauce simmered with green peppers, onions, and garlic, finished with fresh basil. The combination of juicy poultry and robust sauce makes this an ideal weeknight dinner or a light enough option for a summer gathering. It offers a comforting, home-style taste that highlights the quality of fresh ingredients without requiring complex techniques. Perfect for serving with crusty bread to soak up the savory sauce.

Ingredients

Directions

  1. In a small bowl, combine the marinade ingredients: 1/2 cup white wine, 5 tablespoons olive oil, 3 chopped garlic cloves, 1/2 teaspoon salt, and 1/4 teaspoon pepper.
  2. Gently loosen the skin on each chicken breast and insert approximately 1/8 of the chopped garlic and torn basil leaves under the skin.
  3. Place the chicken breasts in a shallow, non-metallic baking dish and pour the marinade over them, ensuring they are well coated.
  4. Cover the dish and refrigerate for 4 to 6 hours, or overnight, to allow the flavors to penetrate the meat.
  5. Remove the chicken from the marinade and discard the used marinade. Grill the chicken over hot coals or medium-high heat for 8 to 10 minutes per side, or until cooked through.
  6. While the chicken grills, prepare the sauce: In a medium skillet, cook 1/4 cup chopped green pepper, 1/4 cup chopped onion, and 1 chopped garlic clove in 2 tablespoons butter or margarine until tender.
  7. Add 2 (8 oz.) cans of tomato juice, 1/2 teaspoon salt, and 1/4 teaspoon pepper to the skillet. Bring the mixture to a boil.
  8. Reduce the heat and simmer uncovered for 10 minutes to thicken the sauce.
  9. Stir in 1/2 cup chopped fresh basil leaves. Serve the sauce immediately alongside the grilled chicken.

Note

Do not reuse the marinade that touched raw chicken. If you wish to use the marinade as a basting sauce during grilling, set aside a portion before adding the raw chicken, or boil the used marinade thoroughly before basting.

For a richer sauce, substitute tomato juice with crushed tomatoes or tomato puree.

Ensure chicken reaches an internal temperature of 165&# 194;°F (74°C) before serving.

Leftover sauce can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stove.
