Description

This Hidatsa-inspired stuffed sugar pumpkin offers a comforting and rustic dining experience. The sweet, tender flesh of the small sugar pumpkin provides a perfect contrast to the savory, spiced filling of ground buffalo or venison, wild rice, and aromatic herbs. It is a substantial meal that celebrates indigenous ingredients and slow-cooking traditions. Ideal for autumn gatherings, holiday dinners, or a cozy weeknight dinner, this dish brings a unique, home-style flavor to your table. The combination of earthy game meat and nutty wild rice creates a deeply satisfying texture, while the natural sweetness of the pumpkin balances the savory spices like sage and mustard. It is a simple yet impressive recipe that highlights seasonal produce and traditional cooking methods.

Ingredients

Directions

  1. Preheat oven to 350F (175C).
  2. Cut the top off the sugar pumpkin to create a lid and scoop out the strings and seeds.
  3. Prick the interior walls of the pumpkin cavity with a fork and rub with 1 teaspoon of salt and the dry mustard.
  4. Heat rendered fat in a large skillet over medium-high heat.
  5. Add ground meat and chopped onion to the skillet; saut until the meat is browned and cooked through.
  6. Remove skillet from heat and stir in cooked wild rice, beaten eggs, remaining 1 teaspoon salt, sage, and pepper until well combined.
  7. Stuff the pumpkin cavity with the meat and rice mixture, packing it gently.
  8. Place 1/2 inch of water in the bottom of a shallow baking pan.
  9. Place the stuffed pumpkin in the pan and bake for 1 1/2 hours, or until the pumpkin flesh is tender when pierced with a fork.
  10. Check the water level during baking and add more as necessary to prevent the pan from drying out.
  11. To serve, cut the pumpkin into wedges, ensuring each portion includes both pumpkin flesh and stuffing.
