Description

This Holiday Harlequin Fudge is a visually stunning and delicious treat perfect for the holiday season. The base is a smooth, sweet marshmallow candy enriched with butter and a splash of brandy or pineapple juice for depth. Half of the mixture is swirled with semi-sweet chocolate and crunchy walnuts, while the other half combines with creamy white chocolate and tart candied cherries. The result is a delightful contrast of textures and flavors in every bite.

Ingredients

Directions

  1. Butter a 9x5 inch loaf pan and set aside.
  2. Combine granulated sugar, brandy (or pineapple juice), sour cream, butter, quartered marshmallows, and salt in a heavy saucepan.
  3. Stir the mixture over moderate heat until the sugar is completely dissolved.
  4. Attach a candy thermometer to the side of the pan and boil the mixture, stirring occasionally, for about 10 minutes or until it reaches 234 degrees F (112°C) (soft-ball stage).
  5. Remove the saucepan from the heat.
  6. Pour approximately 3/4 cup of the hot syrup into a heat-proof bowl or measuring cup.
  7. Add semi-sweet chocolate bits to the separated syrup and stir until the chocolate is completely melted and smooth.
  8. Quickly stir the chopped walnuts into the semi-sweet chocolate mixture.
  9. Pour the walnut-chocolate mixture into the prepared loaf pan and spread it evenly to form the bottom layer.
  10. Place the saucepan containing the remaining hot syrup into a shallow pan of boiling water (bain-marie) to keep it warm.
  11. Add the cut-up white chocolate and chopped candied cherries to the remaining syrup.
  12. Stir until the white chocolate is completely melted and the mixture is smooth.
  13. Pour the white chocolate-cherry mixture over the semi-sweet chocolate layer in the loaf pan.
  14. Quickly spread the top layer level with the back of a spoon or spatula.
  15. Let the fudge stand at room temperature until completely set, about 2-4 hours.
  16. Cut into squares and serve.
