Ingredients

Directions

  1. Preheat oven to 400&# 194;°F (200ðC). In a large bowl, combine all-purpose flour, Wondra flour, dried basil, salt, and pepper.
  2. Cut the cold butter into the flour mixture using a pastry cutter or fork until it resembles coarse crumbs with some pea-sized pieces remaining.
  3. Gradually add milk to the flour mixture, stirring gently until a soft dough forms. Do not overmix.
  4. Turn dough onto a lightly floured surface and knead gently 5-6 times. Pat out to 1-inch thickness.
  5. Cut dough into 6 rounds using a biscuit cutter. Place on a baking sheet and bake for 15-18 minutes until golden brown.
  6. While biscuits bake, melt 1 tablespoon of butter in a saucepan over medium heat. Add red bell peppers and mushrooms; sauté for 3-4 minutes until softened.
  7. Stir in chicken broth and bring to a simmer. Whisk in a slurry of 1 tablespoon Wondra flour mixed with 2 tablespoons water to thicken the gravy.
  8. Add milk and spinach to the gravy, stirring until spinach wilts. Season with salt and pepper to taste.
  9. Split baked biscuits horizontally. Place a portion of cooked turkey inside each biscuit.
  10. Ladle the creamy vegetable gravy over the turkey and biscuits. Serve immediately.

Note

For extra flaky biscuits, keep the butter and milk very cold until mixing.

You can substitute the turkey with leftover chicken or roast beef.

Leftover gravy can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stovetop, adding a splash of milk if too thick.

If you prefer a thicker gravy, increase the Wondra flour slurry slightly.

Fresh basil can be used instead of dried; use 1 tablespoon chopped fresh basil.
