Ingredients

Directions

  1. Combine yeast, salt, and 3 cups of flour in a large mixer bowl.
  2. Heat water, olive oil, and sugar in a small saucepan over medium heat until very warm (125&# 194;°F to 130ðF).
  3. At low speed, beat the warm liquid mixture into the dry ingredients just until blended.
  4. Increase speed to medium and beat for 2 minutes.
  5. Add 1 cup more flour and beat for 2 additional minutes.
  6. Using a wooden spoon, gradually stir in 3 cups of flour to make a soft dough.
  7. Turn dough out onto a floured surface and knead until smooth and elastic, about 8 to 10 minutes, adding additional flour as necessary to prevent sticking.
  8. Shape dough into a ball, cover, and let stand for 15 minutes.
  9. Grease two large cookie sheets.
  10. Divide dough in half and press into two 12-inch rounds on the prepared cookie sheets.
  11. Brush each crust with 1 teaspoon of olive oil.
  12. Cover and let rise in a warm place until doubled in bulk, about 30 minutes.
  13. Press edges of dough to form a 1-inch rim.
  14. Preheat oven to 450ðF (232ðC).
  15. Bake crusts for 20 minutes.
  16. Add your desired toppings and bake for 10 minutes more.

Note

Make Ahead: Crusts can be made ahead. Cool completely, then wrap tightly and refrigerate for up to 2 days or freeze for up to 3 months. To use frozen crusts, unwrap and bake on a cookie sheet in a preheated 450ðF oven for 5 minutes before adding toppings and baking for the remaining time.

Yeast Temperature: Ensure water is not too hot (above 130ðF) as this can kill the yeast. If using active dry yeast instead of quick-rise, you may need to let the yeast proof in the water with sugar for 5-10 minutes before mixing.
