Description

This classic braided egg bread is the perfect centerpiece for any brunch or holiday table. Enriched with eggs and butter, the dough yields an incredibly soft, tender crumb with a slight sweetness that complements savory sides beautifully. The traditional braid adds an elegant touch, while the egg wash and sesame seeds create a gorgeous, golden-brown crust. It’s warm, comforting, and irresistible fresh from the oven.

Ingredients

Directions

  1. Dissolve yeast in 1/2 cup warm water in a large bowl; let stand until foamy, about 5 minutes.
  2. Add warm milk, sugar, salt, 3 beaten eggs, softened butter, and 3 1/2 cups flour to the yeast mixture.
  3. Beat mixture on low speed until smooth, then increase speed to high and beat for 3 minutes.
  4. Stir in enough remaining flour, 1 tablespoon at a time, to form a soft dough that pulls away from the sides of the bowl.
  5. Turn dough out onto a lightly floured surface; knead until smooth and elastic, about 6-8 minutes.
  6. Place dough in a greased bowl, turning once to grease top; cover with plastic wrap or a damp cloth.
  7. Let rise in a warm place until almost doubled in size, about 1 1/2 to 2 hours.
  8. Punch dough down to release air bubbles.
  9. Cover and let rise again until almost doubled, about 30 minutes.
  10. Divide dough into two equal portions.
  11. On a lightly floured surface, shape each portion into a 14-inch long rope.
  12. For each loaf, take three ropes (if dividing into 6 portions as original suggests, or split each portion into 3 strands) and braid them together on a greased baking sheet.
  13. Pinch ends securely to seal the braid.
  14. Cover braided loaves and let rise until doubled in size, about 50-60 minutes.
  15. Preheat oven to 375°F (190°C).
  16. Beat the reserved egg yolk with 1 tablespoon of water; brush mixture over the loaves.
  17. Sprinkle loaves evenly with sesame seeds.
  18. Bake at 375°F (191°C) for 30-35 minutes, or until golden brown and bread sounds hollow when tapped.
