These Honey & Currant Scones are a delightful twist on the classic British tea treat. By infusing the dough with warm honey and fresh orange zest, each bite offers a complex balance of sweetness and citrus brightness. The addition of plump currants adds bursts of tartness that cut through the rich, buttery crumb. These scones are incredibly easy to make, requiring just a few simple ingredients and minimal effort. They are perfect for weekend brunches, holiday gatherings, or a cozy afternoon tea with friends. Serve them warm from the oven, split open and slathered with clotted cream and jam for the ultimate indulgent experience.Ingredients
Directions
-
Preheat the oven to 400&# 194;°F (200ðC). Line two large baking sheets with parchment paper.
-
In a large bowl, whisk together the dry scone mix, currants, grated orange peel, and ground nutmeg until evenly distributed.
-
In a separate small bowl or jug, whisk together the honey and milk until well combined and smooth.
-
Pour the honey-milk mixture into the dry ingredients. Stir gently with a fork or spatula until a soft, cohesive dough forms. Do not overmix.
-
Turn the dough out onto a lightly floured surface. Knead gently and briefly, just until the dough comes together and is no longer sticky.
-
Divide the dough in half. On the floured surface, roll each half into an 8x30-inch rectangle, about 1/2-inch thick.
-
Using a sharp knife or pastry cutter, cut each rectangle lengthwise down the center, then crosswise into six equal squares.
-
Cut each square diagonally to create two triangles. You should have 24 scones in total.
-
Place the scones on the prepared baking sheets, leaving about 1 inch of space between each one.
-
Brush the tops of the scones lightly with egg wash to promote browning and shine.
-
Bake for 12-15 minutes, or until the scones are golden brown on top and sound hollow when tapped on the bottom.
-
Remove from the oven and let cool on a wire rack for a few minutes before serving.
