Description

This Honey-Apple Butter is a comforting, deeply flavored spread that captures the essence of autumn in every bite. Made by slowly simmering tart apples with sweet apple cider, honey, brown sugar, and warm spices, this recipe transforms simple ingredients into a luxurious, jammy consistency. The long cooking time allows the flavors to meld and caramelize, resulting in a dark, glossy butter that is perfect for spreading on toast, biscuits, or pancakes. It also serves as an excellent accompaniment to pork dishes, cheese boards, or yogurt. Easy to make in large batches, this versatile condiment stores well in the refrigerator, making it a wonderful homemade gift or a pantry staple for cozy breakfasts throughout the season.

Ingredients

Directions

  1. Heat the apple cider to a boil in a large Dutch oven.
  2. Boil uncovered for about 15 minutes, or until the cider reduces to 2 cups.
  3. Add the prepared apples and lemon slices to the reduced cider.
  4. Return mixture to a boil, then reduce heat to low.
  5. Simmer uncovered for about 1 hour, stirring occasionally, until the apples are very soft.
  6. Mash the apples with a potato masher until smooth and free of lumps.
  7. Stir in the honey, brown sugar, and ground cinnamon.
  8. Return mixture to a boil, then reduce heat to low again.
  9. Simmer uncovered for about 1.5 hours, stirring occasionally, until the mixture is thick and no liquid separates from the pulp.
  10. Immediately pour the hot apple butter into sterilized jars, leaving 1/4-inch headspace.
  11. Wipe the rims of the jars clean and seal with lids.
  12. Cool the jars on a rack for 1 hour.

Storage: Store sealed jars in the refrigerator for up to 2 months. Once opened, keep refrigerated and consume within a few weeks.

Variations: Apple butter is traditionally a specialty of the Pennsylvania Dutch. While this version is mashed for simplicity, you can sieve the mixture before the final simmer for a smoother, more commercial texture.

Tip: Use tart apples like Granny Smith or Fuji for a balanced sweetness that contrasts well with the honey and brown sugar.
