Description

These Hot & Spicy Beef Back Ribs are a bold, flavorful centerpiece for any barbecue or family gathering. The ribs are slow-cooked in foil packets to ensure they become incredibly tender and fall-off-the-bone juicy, locking in the natural beefy flavors. They are then finished over an open flame with a vibrant, tangy glaze made from ketchup, lemon juice, cinnamon, and a kick of hot pepper sauce. The combination of sweet, sour, and spicy notes creates a complex and satisfying taste profile that pairs perfectly with the rich meat. Ideal for summer cookouts or hearty weeknight dinners, this dish delivers robust, home-style comfort with a delicious heat.

Ingredients

Directions

  1. Place each slab of ribs, meat side down, in the center of a double-thick rectangle of heavy aluminum foil.
  2. Sprinkle 2 tablespoons of water over the rib bones.
  3. Bring two opposite sides of the foil together over the top of the ribs to form a packet.
  4. Fold the edges over 3 to 4 times, pressing the crease tightly each time to seal, leaving some air space inside.
  5. Flatten the foil at one end, crease it to form a triangle, and fold it over several times toward the package, pressing tightly to seal.
  6. Repeat the sealing procedure on the other end.
  7. Place the foil packets on the grill grid directly over low to medium coals.
  8. Cover the cooker and cook for 1 1/2 hours, turning the packets every 30 minutes.
  9. Meanwhile, combine ketchup, the remaining 1/2 cup water, lemon juice, cinnamon, hot pepper sauce, and crushed red pepper in a small saucepan.
  10. Bring the sauce mixture to a boil.
  11. Reduce heat and simmer slowly for 10 to 12 minutes.
  12. Remove the ribs from the foil packets.
  13. Place the ribs on the grill grid over medium coals.
  14. Broil for 30 to 40 minutes, turning occasionally and brushing with the sauce.
  15. Serve the ribs with the remaining sauce.

Note

Ensure your charcoal is well-lit and ashed over before placing the packets on the grill to maintain a consistent low-to-medium heat for the slow cooking phase.

When sealing the foil packets, make sure they are tight to trap steam, which helps tenderize the beef ribs during the first stage of cooking.

For the final broiling stage, keep a close eye on the ribs to prevent the sugary ketchup sauce from burning. If the sauce thickens too much, you can add a splash of water to thin it out.

Adjust the amount of crushed red pepper and hot pepper sauce according to your preferred level of spiciness.
