Description

This authentic Hot and Sour Soup delivers a perfect balance of spicy heat and tangy vinegar, creating a deeply satisfying and aromatic bowl. Key ingredients like rehydrated dried mushrooms, silken tofu, and bamboo shoots provide varied textures, while a cornstarch slurry creates the signature silky thickness. Finished with delicate egg ribbons and fresh green onions, this soup is incredibly comforting on cold days. It is a staple of Chinese cuisine that is surprisingly simple to make at home.

Directions

  1. Cover dried mushrooms with warm water and let stand for 30 minutes to rehydrate.
  2. Remove mushrooms from soaking water; cut off and discard the tough stems.
  3. Thinly slice the mushroom caps and set aside.
  4. Measure the mushroom soaking water, discarding any sandy sediment from the bottom.
  5. Combine the soaking water with vegetable stock in a 2-quart saucepan to make a total of 4 cups liquid.
  6. Add dry sherry, sliced bamboo shoots, and sliced mushrooms to the liquid.
  7. Bring the mixture to a boil, then reduce heat, cover, and simmer for 15 minutes.
  8. Add diced tofu, thawed peas, white wine vinegar, and soy sauce to the pot.
  9. Heat the soup for 3 minutes to warm through the ingredients.
  10. In a small bowl, stir together cornstarch and 1/4 cup water until smooth.
  11. Stir the cornstarch mixture into the simmering soup.
  12. Cook, stirring constantly, until the soup thickens slightly.
  13. Turn off the heat.
  14. Stir in white pepper and sesame oil.
  15. While stirring the soup continuously in one direction, slowly pour in the beaten egg to create ribbons.
  16. Sprinkle with sliced green onions and add salt to taste.
