Description

This Hot Cashew Chicken Salad offers a delightful contrast between warm, savory protein and cool, crisp vegetables. The dish features tender boneless chicken breasts stir-fried with aromatic ginger and garlic, then tossed in a glossy sweet and salty soy-honey glaze. Fresh romaine lettuce and baby spinach provide a crunchy, nutritious base, while mandarin oranges add a bright, juicy sweetness that cuts through the richness of the sauce. Crispy cashews sprinkled on top contribute a satisfying nutty crunch.

Directions

  1. In a large salad bowl, combine the chopped romaine lettuce, spinach, and drained mandarin oranges. Toss gently to mix and set aside.
  2. In a small bowl, whisk together the soy sauce, honey, ground ginger, and 3 tablespoons of water to create the dressing. Set aside.
  3. Heat the vegetable oil in a wok or large frying pan over medium-high heat.
  4. Add the diced chicken breasts to the hot pan. Stir-fry until the chicken is barely opaque throughout, about 5 minutes.
  5. Add the chopped scallions and minced garlic to the pan. Cook for 1 more minute, stirring constantly to prevent burning.
  6. Pour the prepared soy-honey sauce into the pan with the chicken. Cook, tossing constantly, for about 30 seconds until the sauce thickens slightly and coats the chicken.
  7. Immediately pour the hot chicken and sauce mixture over the greens and oranges in the salad bowl.
  8. Toss the salad gently to distribute the warm dressing evenly among the greens and fruit.
  9. Sprinkle the cashews on top of the salad. Serve immediately while the chicken is still warm.
