Ingredients

Directions

  1. Preheat oven to 400ðF (200ðC).
  2. Grease a 10x1 1/2-inch pie plate, an 8x8-inch square baking dish, or six 10-oz custard cups.
  3. In a 10-inch skillet over medium heat, cook ground beef and chopped onions until beef is browned and onions are tender. Drain excess fat.
  4. Stir salt and pepper into the beef mixture. Spread evenly into the bottom of the prepared dish.
  5. In a blender or bowl, beat eggs, milk, and Bisquick mix until smooth. If using a blender, blend on high for 15 seconds. If using a whisk or hand beater, beat for 1 minute.
  6. Pour the batter evenly over the beef layer.
  7. Bake for 30 minutes.
  8. Remove from oven and top with tomato slices. Sprinkle evenly with shredded cheese.
  9. Return to oven and bake for an additional 5 to 8 minutes, until the cheese is melted and a knife inserted into the center comes out clean.
  10. Let cool for 5 minutes before serving.
