Ingredients

Directions

  1. Place beef tenderloin steaks between two pieces of waxed paper or plastic wrap and pound until they are 1/4 inch thick.
  2. In a small bowl, mix together flour, salt, and black pepper. Dredge the pounded steaks in the flour mixture, coating both sides evenly.
  3. In a large skillet, melt 1 tablespoon of butter over medium-high heat.
  4. Add the floured steaks to the skillet and brown for about 1 minute on each side. Do not overcook; they should be just browned on the outside.
  5. Remove steaks from the skillet and place them on a platter.
  6. Spread both sides of the steaks with Dijon mustard and sprinkle with 1 teaspoon of Worcestershire sauce. Set aside.
  7. In the same skillet, melt the remaining 3 tablespoons of butter over medium heat.
  8. Add the thinly sliced mushrooms and minced shallots to the skillet. Sauté for about 2 minutes until softened.
  9. Carefully add the brandy to the skillet. If desired, use a long match to flambé the alcohol, then let it burn off.
  10. Stir in the beef bouillon and the remaining 1 tablespoon of Worcestershire sauce.
  11. Cook and stir the sauce until it is hot and slightly thickened.
  12. Return the steaks to the skillet, turning to coat them in the sauce. Reheat for 2 minutes until warmed through.
  13. Serve immediately, sprinkling with fresh parsley if desired.
