Description

This Indonesian Sate Shrimp recipe delivers the authentic flavors of Southeast Asia right to your home kitchen. The shrimp are marinated in a fragrant blend of turmeric, chili, and garlic, then grilled to perfection for a smoky char. The sauce balances sweet, savory, and spicy notes, creating a complex and satisfying dining experience. Perfect for a special weeknight dinner or a casual gathering, this dish is quick to prepare yet impressive enough for guests. The combination of tender seafood and nutty sauce makes it a standout meal that is both comforting and exotic.

Directions

  1. Saute minced onion and garlic in peanut oil over medium heat until the onion is soft and translucent, about 10 minutes.
  2. Stir in peanut butter, lemon juice, turmeric, chili powder, and soy sauce.
  3. Add chicken stock to the pan and bring to a simmer, stirring constantly until the mixture thickens into a sauce.
  4. Remove the sauce from heat and allow it to cool to room temperature.
  5. Place the shelled and deveined shrimp in a bowl and toss with half of the cooled sauce to marinate.
  6. Cover the shrimp and let them stand at room temperature for 30 minutes to 1 hour, or refrigerate for 2 to 3 hours for deeper flavor.
  7. If refrigerated, remove the shrimp from the fridge 1 hour before cooking to bring them close to room temperature. Reserve the remaining sauce for serving.
  8. Thread the marinated shrimp onto skewers, arranging them so they lie flat.
  9. Preheat the broiler for 5 to 10 minutes.
  10. Place the skewered shrimp on a broiler pan or grill.
  11. Cook the shrimp for about 5 minutes per side, turning only once, until they are pink, opaque, and lightly browned.
  12. While shrimp cook, bring the reserved sauce to a boil in a saucepan.
  13. Mix cornstarch with 2 tablespoons of water to create a slurry, then stir into the boiling sauce to thicken it.
  14. Remove the sauce from heat and stir in the sour cream until smooth.
  15. Serve the grilled shrimp over steamed rice, drizzled with the warm peanut sauce.
