Directions
-
Sterilize canning jars and lids by boiling them in water for 10 minutes, then keep them hot until ready to use.
-
In a large, heavy-bottomed pot, combine 1 cup of the cherry juice with the vanilla and almond extract.
-
Bring the mixture to a rolling boil over high heat, stirring occasionally.
-
Gradually sprinkle in the pectin while stirring constantly to prevent lumps.
-
Return the mixture to a full rolling boil and cook for 1 minute, stirring vigorously.
-
Add the remaining 2 1/2 cups of cherry juice and all the sugar to the pot.
-
Stir constantly and bring the mixture back to a full rolling boil that cannot be stirred down.
-
Boil hard for exactly 1 1/2 minutes, stirring continuously to prevent burning.
-
Remove the pot from heat and skim off any foam from the surface with a clean spoon.
-
Ladle the hot jelly immediately into the sterilized jars, leaving 1/4 inch headspace at the top.
-
Wipe the rims of the jars with a clean, damp cloth to ensure a proper seal.
-
Place lids on the jars and screw on the bands until fingertip-tight.
-
Process the jars in a boiling water bath for 10 minutes to ensure safe preservation.
-
Remove jars from the water bath and let them cool undisturbed for 12 to 24 hours.
-
Check seals by pressing the center of the lid; if it does not pop up, the jar is sealed.
