Description

These Italian Envelopes are a delightful fusion of textures and flavors, combining the crunch of fried wonton wrappers with a creamy, savory filling. The mixture of ricotta, mozzarella, and chopped salami creates a rich, melty center that is perfectly balanced by dried oregana and a pinch of salt and pepper. Ideal for holiday gatherings, game day parties, or as a sophisticated snack, these bites are easy to assemble and fry to golden perfection. Sprinkled with fresh Parmesan right after cooking, they offer a warm, satisfying bite that disappears quickly. A reliable crowd-pleaser that brings home-style Italian comfort food to your finger-food table.

Ingredients

Directions

  1. In a small bowl, combine the beaten egg, ricotta cheese, chopped salami, mozzarella cheese, oregano, salt, and pepper. Mix until well blended.
  2. Place a wonton wrapper on a clean work surface at an angle with one corner facing you.
  3. Spoon about 1 tablespoon of the cheese mixture into the center of the wrapper.
  4. Lightly brush the edges of the wrapper with water to help it seal.
  5. Fold the right and left corners inward, overlapping slightly in the middle.
  6. Bring the bottom and top corners together, overlapping slightly in the middle to form an envelope shape. Press gently to seal.
  7. Repeat the process with the remaining wrappers and filling until all ingredients are used.
  8. Heat the vegetable oil in a large skillet over medium heat.
  9. Fry the envelopes in a single layer, turning occasionally, until golden brown on both sides.
  10. Remove the cooked envelopes from the skillet and immediately sprinkle with grated Parmesan cheese.
  11. Transfer to a plate lined with paper towels to drain excess oil.
  12. Repeat the frying process with the remaining envelopes. Serve warm.

Note

Keep unused wonton wrappers covered with a damp towel to prevent them from drying out while assembling.

For a crispier texture, ensure the oil is hot enough before adding the envelopes but not smoking.

These envelopes are best served immediately while hot and crispy.

You can substitute salami with chopped prosciutto or pepperoni for a different flavor profile.
