Description

This robust Italian meat sauce mix is designed for batch cooking and freezing, allowing you to have a rich, homemade base ready for quick weeknight dinners. Combining mild Italian sausage and lean ground beef, this recipe delivers a deep, savory flavor profile enhanced by aromatic herbs like basil and thyme. The addition of carrots, onions, broccoli, and cauliflower adds texture and nutritional value, while tomato paste and puree provide a thick, tangy foundation. Slow simmering melds the ingredients together, creating a complex taste that improves over time. Perfect for tossing with pasta, ladling over polenta, or using as a hearty topping for baked dishes. Store in the freezer for up to six months for convenient, home-style comfort food whenever you need it.

Directions

  1. Remove casings from the mild Italian sausage and crumble the meat.
  2. In a large kettle or Dutch oven, brown the Italian sausage, ground beef, salt, pepper, and instant minced garlic over medium-high heat.
  3. Drain excess fat from the meat mixture.
  4. Place the peeled onion and carrot in a blender.
  5. Cover the vegetables with water and blend until finely chopped.
  6. Drain the water from the blended vegetables and add the onion and carrot mixture to the meat in the kettle.
  7. Continue cooking the meat and vegetable mixture for a few minutes to soften the vegetables.
  8. Stir in the sweet basil, chili powder, thyme, frozen cauliflower, and frozen broccoli.
  9. Add the tomato paste, tomato puree, and 8 cups of water to the pot.
  10. Bring the mixture to a boil, stirring occasionally to prevent sticking.
  11. Cover the pot and reduce heat to low; simmer gently for 8 hours.
  12. Skim off any fat that rises to the surface during simmering.
  13. Ladle the hot sauce into eight or nine 1-pint freezer containers, leaving headspace for expansion.
  14. Seal and label the containers as "Italian Meat Sauce Mix."
  15. Freeze immediately and use within 6 months.
