Ingredients

Directions

  1. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
  2. Add the diced red bell pepper and sliced fennel bulb to the skillet. Season with half of the crushed red pepper flakes and salt to taste.
  3. Cook, stirring frequently, until the vegetables are tender-crisp and begin to brown at the edges, about 6 to 7 minutes.
  4. Transfer the cooked vegetables to a large mixing bowl. Add half of the lemon juice and toss to combine. Set aside to cool slightly.
  5. Add the remaining 1 1/2 tablespoons of olive oil to the same skillet over medium-high heat.
  6. When the oil is hot, add the peeled shrimp, remaining crushed red pepper flakes, and salt to taste.
  7. Cook, stirring occasionally, until the shrimp turn pink and opaque, about 2 to 3 minutes.
  8. Just before removing the shrimp from the heat, add the remaining lemon juice and minced garlic. Toss to coat.
  9. Add the cooked shrimp and garlic mixture to the bowl with the vegetables.
  10. Stir in the sliced green onions, drained capers, minced fresh rosemary, and reduced-fat mayonnaise. Mix well until all ingredients are evenly combined.
  11. Taste and adjust seasoning with additional salt or lemon juice if needed.
