Description

This robust dish features tender grilled lamb racks paired with sweet-tart cranberry beans and smoky roasted chiles. The combination of mesquite-grilled peppers and onions adds a deep, aromatic heat that complements the rich flavor of the lamb. It is an excellent choice for summer gatherings or special weeknight dinners when you want something hearty yet elegant. The beans provide a creamy texture that balances the charred vegetables, while the rosemary and garlic infusion ensures every bite is fragrant and satisfying. Serve immediately for the best flavor experience.

Ingredients

Directions

  1. Marinate the lamb racks with rosemary, garlic, black pepper, and olive oil, refrigerating for four hours.
  2. Place cranberry beans, garlic, onion, rosemary, black pepper, and bay leaves in a heavy pot with chicken stock.
  3. Bring the bean mixture to a boil, then reduce heat and simmer for 15 minutes.
  4. Add coarse sea salt to the beans and continue cooking until tender.
  5. Remove the bean pot from heat, discard aromatics, and reserve the beans and their cooking liquid.
  6. Grill poblano, Anaheim, and pimento chiles, red and yellow bell peppers, and Chinese onions over mesquite until charred.
  7. Wrap garlic cloves in foil and roast on the grill until soft.
  8. Place the grilled chiles and peppers in a sealed container to sweat for 10 minutes to ease peeling.
  9. Peel the chiles and peppers, slice them, and season with salt and pepper.
  10. Preheat oven to 450&# 194;°F (232ðC).
  11. Season the marinated lamb racks well with salt and pepper.
  12. Sear the lamb in a heavy pan over high heat until browned on all sides.
  13. Roast the lamb in the oven for 10 minutes.
  14. Add the sliced chiles and reserved beans to the pan with the lamb.
  15. Cook for five minutes, then remove the lamb and set aside.
  16. Deglaze the pan with the reserved bean juices and reduce to create a glaze.
  17. Slice the lamb and serve over the glazed beans and roasted peppers.

Note

The recipe calls for "And 4 T-bones of lamb" in the ingredients, but the directions refer to "Racks" and "T-bones". Ensure you use lamb racks or chops suitable for roasting and searing.

If fresh cranberry beans are unavailable, dried cranberry beans can be used. Soak dried beans overnight and simmer until tender, which may take longer than fresh beans.

Mesquite wood chips provide a distinct smoky flavor. If mesquite is not available, hickory or oak can be substituted for the grilling process.

Sweating the grilled peppers and chiles in a sealed container helps loosen the skins for easy peeling. You can also place them in a bowl and cover tightly with plastic wrap if a container with a lid is not available.

Adjust the cooking time for the lamb based on your desired doneness. For medium-rare, aim for an internal temperature of 130-135ðF.

The bean juices should be reserved before discarding the aromatics. If the liquid is too thin, simmer it down to concentrate the flavor before using it to deglaze the pan.
