  1. Preheat the oven to 400&# 194;°F (200ðC).
  2. Peel the potatoes and cut them into thin strips, approximately 2 inches long and 1/4 inch thick. Place them in cold water to prevent discoloration.
  3. Thinly slice the yellow onions.
  4. Heat 2 tablespoons of butter and 2 tablespoons of vegetable oil in a skillet over medium heat.
  5. Add the sliced onions and cook for about 10 minutes, stirring frequently, until they are soft and translucent but not browned.
  6. Drain the potatoes and pat them dry thoroughly with paper towels.
  7. Lightly butter a 1.5 to 2-quart soufflé or baking dish.
