Ingredients

Directions

  1. Drain the chickpeas thoroughly.
  2. Place the chickpeas in a large bowl and mash them thoroughly with a potato masher or fork until broken down.
  3. Pour off any excess oil from the tahini container, then add the tahini to the mashed chickpeas.
  4. Add the lemon juice, chopped parsley, tamari, paprika, garlic powder, and cayenne pepper to the bowl.
  5. Mix thoroughly with the masher, gradually adding up to 1/3 cup of water until the desired consistency is achieved: creamy but not runny.
  6. Cover the bowl and refrigerate for at least several hours or overnight to allow the flavors to meld and mellow.
  7. Taste the hummus before serving and adjust seasoning with salt or additional lemon juice if necessary.

Note

Storage: Keep hummus in an airtight container in the refrigerator for up to 5 days. A thin layer of olive oil on top can help preserve freshness.

Substitutions: Fresh lemon juice can be used instead of reconstituted juice for a brighter flavor. Regular soy sauce can replace tamari if gluten is not a concern.

Serving Suggestions: Serve with warm pita wedges, sliced cucumbers, carrots, bell peppers, or whole-grain crackers. It also makes an excellent sandwich spread.

Texture Tip: For an ultra-smooth hummus, blend in a food processor or high-speed blender instead of mashing by hand.
