This elegant yet simple pie is perfect for dinner parties, holiday gatherings, or as a special treat to impress guests. With its stunning presentation and easy assembly, it offers the taste of a high-end bakery dessert with the convenience of homemade preparation.

Ingredients

Directions

  1. Preheat oven to 325F (165C).
  2. Place chocolate wafer cookies in a food processor and pulse until fine crumbs form.
  3. Add melted butter to the cookie crumbs and pulse until the mixture resembles wet sand and holds together when pressed.
  4. Press the crumb mixture firmly and evenly onto the bottom and up the sides of a 9-inch pie plate.
  5. Bake the crust for 10 minutes, then remove and let cool completely at room temperature.
  6. While the crust cools, combine 6 tablespoons of Kahlua and espresso powder in a small saucepan over low heat.
  7. Warm the mixture gently until the espresso powder is fully dissolved.
  8. Remove from heat and stir in the chopped semi-sweet chocolate until melted and smooth, creating a ganache.
  9. Let the chocolate ganache cool to room temperature.
  10. Allow the vanilla ice cream to soften slightly at room temperature for easier mixing.
  11. In a large bowl, beat the softened vanilla ice cream with 2 tablespoons of Kahlua until smooth and well combined.
  12. Spread the vanilla ice cream mixture evenly over the bottom of the cooled crust.
  13. Freeze the pie until the vanilla layer is firm, about 30-45 minutes.
  14. Spread the cooled chocolate ganache evenly over the frozen vanilla ice cream layer.
  15. Return to freezer and freeze until the ganache layer is firm, about 30 minutes.
  16. Allow the chocolate ice cream to soften slightly at room temperature.
  17. Beat the softened chocolate ice cream with the remaining 2 tablespoons of Kahlua until smooth.
  18. Spread the chocolate ice cream mixture over the ganache layer in the pie.
  19. Freeze the pie until completely firm, at least 4 hours or overnight.
  20. Before serving, pipe a decorative border of whipped cream around the inside edge of the pie.
