Description

Kakavia is a traditional Greek fish stew that celebrates the bounty of the sea. This comforting dish features a clear, flavorful broth made by simmering a variety of fresh fish, shellfish, and vegetables. The base is built with onions, tomatoes, fennel, and herbs, creating a savory backdrop for the delicate flavors of the seafood. Served with toasted bread slices and croutons, it is perfect for dipping into the aromatic stock. Ideal for family gatherings or a cozy dinner, this recipe captures the essence of Mediterranean coastal cuisine with its simple yet elegant preparation.

Ingredients

Directions

  1. In a large soup pot with a wide bottom, sauté the sliced onions in olive oil over medium heat until soft but not browned.
  2. Add chopped tomatoes, sliced fennel or celery, parsley sprigs, bay leaf, and thyme sprigs to the pot.
  3. Pour in dry white wine and water, then bring the mixture to a boil.
  4. Season with salt and freshly ground black pepper, reduce heat, and simmer for 45 minutes to develop the broth.
  5. Strain the stock into a large bowl through a sieve, pressing on the vegetables to extract all flavorful pulp before discarding the solids.
  6. Return the strained stock to the pot and bring it back to a boil.
  7. Meanwhile, lightly salt the fish fillets, let them stand for 10 minutes, rinse with water, and gently lower them into the boiling stock. Add more water if needed to cover the fish.
  8. Reduce the heat and simmer gently for 5 minutes.
  9. Add the lobster (cut up with claws cracked) to the pot, cover, and simmer for 5 minutes.
  10. Add the peeled shrimp and scallops or scrubbed mussels, then simmer for an additional 10 minutes until the seafood is cooked through.
  11. Taste the broth and adjust the seasoning with more salt and pepper if necessary.
  12. Arrange thick slices of toasted bread in large soup plates.
  13. Ladle the hot fish and broth into the bowls over the bread, serving croutons on a separate plate.
