Description

These Kellogg's All-Bran muffins are a nutritious yet satisfying treat that balances whole-grain goodness with comforting sweetness. The batter utilizes unsweetened applesauce and egg whites to keep the texture moist and light, while the All-Bran cereal adds a hearty, wholesome crunch. Topped with a simple cinnamon-sugar streusel made from cold margarine, these muffins offer a delightful contrast of textures. They are perfect for a quick breakfast, a mid-afternoon snack, or a healthy addition to a picnic basket.

Directions

  1. Preheat oven to 400°F (200°C). Lightly coat a 12-cup muffin pan with vegetable cooking spray.
  2. In a small bowl, combine the flour, brown sugar, and cinnamon for the streusel topping.
  3. Using a pastry blender or fork, cut in the cold margarine until the mixture resembles coarse crumbs. Set aside for topping.
  4. In a medium bowl, whisk together the remaining flour, baking powder, cinnamon, nutmeg, and salt. Set aside.
  5. In a large mixing bowl, combine the Kellogg's All-Bran Original cereal, skim milk, brown sugar, and unsweetened applesauce.
  6. Let the mixture stand for about 4 minutes, or until the cereal softens.
  7. Stir in the egg whites, vegetable oil, vanilla, and seedless golden raisins (if using) until well combined.
  8. Add the flour mixture to the wet ingredients and stir gently until just combined; do not overmix.
  9. Divide the batter evenly among the prepared muffin cups.
  10. Sprinkle the reserved streusel topping evenly over each muffin.
  11. Bake for 20 minutes, or until the muffins are golden brown and a toothpick inserted into the center comes out clean.
  12. Allow muffins to cool in the pan for 5 minutes before transferring to a wire rack to cool completely. Serve warm.
