Description

This refreshing Key Lime Pie offers a bright, citrusy kick that cuts through the richness of a traditional dessert. Made with a buttery graham cracker crust and a light, gelatin-set filling, it delivers the classic tartness of key limes without the heavy creaminess of baked custard pies. The use of skim milk and reduced-fat cream cheese keeps the texture smooth yet lighter, making it an excellent choice for health-conscious bakers. The subtle sweetness from NutraSweet allows the natural lime flavor to shine through, creating a balanced profile that is both satisfying and guilt-free. Perfect for summer gatherings, potlucks, or as a sophisticated end to a light meal, this no-bake pie requires minimal effort but yields impressive results. Its a delightful treat that brings a taste of tropical sunshine to any occasion.

Ingredients

Directions

  1. Preheat oven to 350F (175C), if baking the crust, or prepare a 7-inch springform pan for a no-bake version.
  2. In a medium bowl, combine graham cracker crumbs, melted margarine, and 2 tablespoons of NutraSweet.
  3. Press the mixture firmly and evenly onto the bottom and 1/2 inch up the sides of the springform pan.
  4. In a small saucepan, sprinkle the unflavored gelatin over 1/2 cup of the skim milk.
  5. Let the mixture stand for 2 to 3 minutes to allow the gelatin to bloom.
  6. Place the saucepan over low heat and stir constantly until the gelatin is completely dissolved.
  7. Remove from heat and set aside to cool slightly.
  8. In a large mixing bowl, beat the softened reduced-fat cream cheese until smooth and fluffy.
  9. Gradually beat in the remaining 1 1/4 cups of skim milk and the dissolved gelatin mixture.
  10. Mix in the fresh lime juice and the remaining 1/2 cup of NutraSweet until well combined.
  11. Pour the filling into the prepared crust.
  12. Refrigerate the pie for at least 2 hours, or until the filling is set and firm.
  13. Run a small spatula around the edge of the pie to loosen it from the pan.
  14. Remove the sides of the springform pan and transfer the pie to a serving plate.
  15. Garnish with lime slices and fresh mint sprigs before serving.
