Ingredients

Directions

  1. Preheat oven to 350°F (175°C).
  2. In a small bowl, mix graham cracker crumbs with melted margarine until crumbs are evenly moistened.
  3. Press the crumb mixture firmly into the bottom of a 9-inch pie plate.
  4. Bake crust for 8-10 minutes or until lightly golden. Remove from oven and let cool completely.
  5. In a small saucepan, sprinkle unflavored gelatin over 1/4 cup of the skim milk. Let stand for 5 minutes to soften.
  6. Heat the milk and gelatin mixture over low heat, stirring constantly until gelatin is completely dissolved. Do not boil.
  7. In a large bowl, beat the softened reduced-fat cream cheese until smooth.
  8. Gradually add the warm milk-gelatin mixture to the cream cheese, beating continuously until combined.
  9. Stir in the remaining 1 1/2 cups skim milk, fresh lime juice, and both portions of NutraSweet Spoonful until the mixture is smooth and well blended.
  10. Pour the filling into the cooled crust.
  11. Refrigerate for at least 4 hours or until the filling is set.
  12. Garnish with lime slices and mint sprigs before serving.

Note

For a gluten-free version, substitute the graham cracker crumbs with gluten-free cookie crumbs or crushed gluten-free crackers.

Ensure the lime juice is freshly squeezed for the best flavor. Bottled juice may lack the vibrant acidity needed for this recipe.

Store leftovers in the refrigerator for up to 3 days. Keep covered to prevent absorbing other odors.

If you prefer a tangier flavor, increase the fresh lime juice by 1 tablespoon.
