Description

This low-fat tiramisu reimagines the classic Italian dessert by using nonfat cottage cheese and sour cream to create a lighter, yet still creamy texture. The layers of espresso-soaked ladyfingers provide a robust coffee flavor that balances the mild tang of the cheese mixture. It is an excellent choice for those looking to reduce fat intake without sacrificing the indulgent experience of a traditional tiramisu. Perfect for dinner parties or as a sophisticated ending to a meal, this dish requires no baking, just patience for chilling. The result is a smooth, refreshing dessert that satisfies cravings while keeping calories in check.

Ingredients

Directions

  1. Place sugar, cottage cheese, and sour cream in a food processor fitted with a metal blade.
  2. Process the mixture until completely smooth and creamy, scraping down the sides as needed.
  3. Set the cheese mixture aside.
  4. In a small bowl, combine hot water and instant espresso granules.
  5. Stir until the granules are fully dissolved; let cool slightly.
  6. Split each ladyfinger in half lengthwise.
  7. Quickly dip 20 ladyfinger halves, cut side down, into the espresso mixture.
  8. Arrange the dipped ladyfingers in a single layer, cut side down, in the bottom of a 9-inch square baking dish.
  9. Dip another 20 ladyfinger halves in the espresso mixture.
  10. Arrange this second layer on top of the first layer, cut side down.
  11. Spread half of the cheese mixture evenly over the ladyfingers.
  12. Dip the remaining 20 ladyfinger halves in the espresso mixture.
  13. Arrange the final layer of ladyfingers on top of the cheese mixture, cut side down.
  14. Spread the remaining cheese mixture evenly over the top layer.
  15. Insert toothpicks into the corners and center of the dish to prevent plastic wrap from sticking to the surface.
  16. Cover the dish tightly with plastic wrap.
  17. Refrigerate for at least 3 hours, or up to 8 hours, to allow flavors to meld.
  18. Remove toothpicks before serving.
  19. Sprinkle with unsweetened cocoa powder just before serving.

Note

For a richer flavor, you can substitute 2 tablespoons of dark rum into the cheese mixture.

If you prefer a stronger coffee taste, use brewed espresso instead of instant granules, ensuring it is cooled before dipping the ladyfingers.

This recipe can be scaled down for smaller gatherings. Half the recipe fits well in an 8x8 inch dish.

Ensure the cheese mixture is completely smooth in the food processor to achieve the desired tiramisu texture.

Store leftovers in the refrigerator covered tightly for up to 3 days.
