Description

This Kerala-style lamb curry, known locally as Aatirachi, delivers deep, aromatic flavors with every bite. The dish combines tender cubes of boneless lamb with earthy green cardamom, pungent black peppercorns, and sweet, caramelized shallots. The meat simmers slowly until it is fork-tender and infused with the warm spices, creating a rich, savory sauce that clings beautifully to the rice. It is a comforting, hearty meal perfect for family dinners or weekend gatherings. The balance of heat from the pepper and the floral notes of the cardamom makes this a standout dish that feels both rustic and refined. Serve it hot with steamed basmati rice or warm flatbread to soak up the delicious juices.

Ingredients

Directions

  1. Rinse the long-grain rice under cold water until the water runs clear, then soak in plenty of water for 1 hour.
  2. Drain the soaked rice thoroughly and set aside.
  3. Heat the oil in a heavy-bottomed pot or Dutch oven over medium heat.
  4. Add the bruised green cardamom pods and black peppercorns, stirring for 30 seconds until fragrant.
  5. Add the sliced shallots and saut&# 195;© until they turn golden brown and caramelized, about 5-7 minutes.
  6. Increase heat to medium-high and add the cubed lamb.
  7. Sear the lamb pieces, stirring occasionally, until browned on all sides, about 5 minutes.
  8. Sprinkle the salt over the lamb and stir to combine.
  9. Pour in the water and bring the mixture to a boil.
  10. Reduce the heat to low, cover the pot with a tight-fitting lid, and simmer gently for 45-50 minutes, or until the lamb is tender.
  11. While the lamb cooks, prepare the rice according to package instructions or steam it until fluffy.
  12. Once the lamb is cooked, taste and adjust seasoning if necessary.
  13. Garnish the curry with fresh chopped coriander leaves.
  14. Serve the hot lamb curry immediately over the steamed rice.

Note

Soaking the rice for one hour helps the grains cook evenly and remain separate and fluffy.

Bruising the cardamom pods by gently pressing them with the side of a knife releases their essential oils, enhancing the aroma of the dish.

If you prefer a spicier curry, you can increase the amount of black peppercorns or add a pinch of red chili powder.

This curry tastes even better the next day as the flavors meld together. Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stovetop, adding a splash of water if needed.

Bone-in lamb can be used instead of boneless, but you may need to increase the cooking time by 15-20 minutes to ensure the meat is tender.
