  1. Cut the lamb into 1 1/2-inch cubes.
  2. Cut the green peppers in halves, then into thirds lengthwise. Remove seeds and cut each piece across to create 12 square pieces.
  3. Peel the yellow onions and cut in half across the middle. Cut each piece into quarters, separating the layers so you have 6 pieces roughly the same size as the green pepper squares.
  4. Place the green peppers, onions, and lamb cubes in a large mixing bowl.
  5. In a small bowl, mix together 1/2 cup olive oil, 1/2 teaspoon oregano, 1/2 teaspoon dried mint (or 1 tablespoon fresh mint), 2 crushed garlic cloves, and 1 tablespoon light soy sauce to make the marinade.
  6. Pour the marinade over the meat and vegetables. Mix well to coat everything evenly.
  7. Let the mixture sit and marinate for 3 hours.
  8. Thread the ingredients onto skewers in the following order: onion, meat, green pepper, meat, onion, meat, green pepper, meat. End with an onion piece.
  9. Grill the skewers until lightly browned on all sides, approximately 15 minutes. Do not overcook.

Note

These kebabs can also be broiled in the oven if grilling is not possible. Place skewers on a broiler pan and cook under high heat, turning occasionally, until browned.

You can substitute good quality beef cubes for the lamb and the result is still excellent.

If using fresh mint, you may add more to taste as it has a milder flavor than dried mint.
