Description

This traditional Lard Cake is a comforting, rustic dessert that relies on the unique richness of lard for its signature tender crumb and subtle savory-sweet balance. Unlike modern butter cakes, this recipe produces a dense yet moist loaf with a golden crust. The combination of whipped egg whites and creamed lard creates a light texture that holds up well to slicing. It pairs beautifully with a cup of tea or coffee, making it perfect for afternoon snacks, family gatherings, or holiday breakfasts. Simple ingredients come together to create a nostalgic treat that feels both hearty and indulgent.

Ingredients

Directions

  1. Preheat oven to 350&# 194;°F (175ðC). Butter a 3x4x12-inch loaf pan or equivalent baking tin.
  2. Separate the eggs, placing the whites in a clean, dry mixing bowl and the yolks in a separate small bowl.
  3. Beat the egg whites until frothy. Gradually add 1/2 cup of the sugar and continue beating until stiff peaks form. Set aside.
  4. In a large mixing bowl, cream the lard with the remaining 1 cup of sugar until light and fluffy.
  5. Add the sifted flour, salt, and baking powder to the creamed lard mixture. Beat for about one minute until well combined.
  6. In a small bowl, mix the evaporated milk with 1/3 cup of water. Add this milk mixture, the egg yolks, and vanilla to the batter. Mix well until smooth.
  7. Gently fold the beaten egg whites into the batter using a spatula, being careful not to deflate the mixture.
  8. Pour the batter into the prepared baking tin. Bake for 30 minutes, or until a toothpick inserted into the center comes out clean.
  9. Allow the cake to cool in the pan for 10 minutes before removing to a wire rack to cool completely.
