Le Chocolat Poivre
Description
Le Chocolat Poivre is a sophisticated dessert featuring delicate chocolate cookie wafers infused with black pepper and cocoa. The wafers are crisp and thin, providing a perfect vehicle for the rich semisweet chocolate mousse. A layer of port aspic adds a refreshing, fruity acidity that cuts through the richness of the chocolate. This dessert is ideal for dinner parties or special occasions, offering a balance of sweet, spicy, and tart flavors. The combination of textures—from the crunchy wafer to the silky mousse and gelatinous aspic—creates a memorable culinary experience.Ingredients
Directions
-
Preheat oven to 275°F (135°C). Position rack in the lower third of the oven.
-
Generously butter two large baking sheets.
-
Create a stencil by cutting a 3 1/2 inch circle from a plastic coffee can or similar lid, discarding the center.
-
In a large stainless steel bowl, sift together the flour, cocoa, and black pepper.
-
In a mixer bowl fitted with the wire whip attachment, beat egg whites and confectioners' sugar on medium speed until well combined.
-
Increase speed to medium-high and continue beating until glossy stiff peaks form, about 5 to 6 minutes.
-
Using a large rubber spatula, fold one-third of the flour mixture into the egg white mixture.
-
Fold in the vanilla extract and half of the melted butter.
-
Fold in another third of the flour mixture.
-
Fold in the remaining melted butter and the rest of the flour mixture until just combined.
-
Place the stencil on the baking sheet. Fill the stencil with a very thin layer of wafer batter, smoothing it evenly with a small metal spatula.
-
Repeat the process to fill the remaining stencils on the baking sheets.
-
Bake the wafers for 12 to 15 minutes, until firm and no longer sticky but still pliable.
-
Carefully remove the individual wafers to a cooling rack to finish cooling and crisp up.
-
For the mousse, combine semisweet chocolate, milk, sugar, and salt in a heatproof bowl.
-
Melt the chocolate mixture over a pot of simmering water, stirring until smooth.
-
Remove from heat and stir in vegetable oil, port, and vanilla extract.
-
Allow the chocolate mixture to cool slightly.
-
Whip heavy cream in a separate bowl until stiff peaks form.
-
Fold the whipped cream into the chocolate mixture until well combined.
-
For the aspic, sprinkle gelatin over 1/4 cup of cold water and let stand for 5 minutes to soften.
-
Heat remaining 1 cup of water and port in a saucepan until simmering.
-
Stir in the softened gelatin and sugar until dissolved.
-
Refrigerate the port mixture until it is thick and syrupy but not set.
-
To assemble, place a chocolate wafer on a serving plate.
-
Spread a layer of chocolate mousse over the wafer.
-
Spoon a layer of the port aspic over the mousse.
-
Refrigerate until set.
-
Dust with confectioners' sugar and cocoa powder before serving.
