Directions
-
Bring a large pot of salted water to a boil. Add spaghettini and cook according to package directions until al dente. Reserve 1/4 cup pasta water, then drain well.
-
While pasta cooks, trim and thinly slice the white part of the leek.
-
Heat olive oil in a large skillet over medium heat.
-
Add minced garlic and sliced leek to the skillet. Sauté for about 5 minutes, stirring occasionally, until leeks are tender and translucent.
-
Pour in white wine. Cook for 2 minutes, scraping up any browned bits from the bottom of the pan, until wine is mostly evaporated.
-
Add the chopped clams with their liquid and bay leaves to the skillet. Simmer gently for 5 minutes to allow flavors to meld.
-
Add the drained spaghettini to the skillet with the clam mixture. Toss well to coat the pasta evenly in the sauce. If needed, add a splash of reserved pasta water to loosen the sauce.
-
Remove skillet from heat. Add the chopped arugula and toss for 30 seconds until just wilted.
-
Season lightly with salt and generously with freshly ground white pepper. Taste and adjust seasoning if necessary.
-
Remove and discard bay leaves.
-
Serve immediately while hot.
