Ingredients

Directions

  1. Place no-boil lasagna noodles in a large bowl and cover completely with boiling water.
  2. Let the noodles stand for 10 minutes, separating them occasionally with a fork to ensure even softening.
  3. Drain the pasta thoroughly and rinse with cold water to stop the cooking process, then drain again.
  4. If using frozen chicken tenders, thaw slightly and halve them crosswise; if using chopped chicken, ensure it is slightly thawed.
  5. Return the drained noodles to the mixing bowl.
  6. Add the chicken, cheddar cheese cubes, sweet pepper strips, and chopped pepperoni to the bowl.
  7. Pour the Italian salad dressing over the mixture and sprinkle with cracked black pepper.
  8. Toss gently until all ingredients are evenly coated with the dressing.
  9. Cover the bowl and refrigerate for at least 2 hours or overnight to allow flavors to meld.
  10. Just before serving, fold in the torn curly endive and halved cherry tomatoes.
  11. Toss gently one last time to distribute the fresh vegetables evenly.
