Description

This microwave-friendly Lemon Chiffon Pie is a refreshing take on classic desserts, offering a delicate balance of tart lemon and sweet peach flavors. The filling sets into a cloud-like texture using unflavored gelatin and chilled evaporated milk, creating a light and airy mouthfeel that is both indulgent and easy to digest. Perfect for summer gatherings or as a simple weeknight treat, this pie requires minimal effort but delivers maximum impact. The graham cracker crust provides a sturdy, sweet base that complements the fruity filling. It is an excellent choice for those looking for a quick yet elegant dessert that can be prepared without turning on the oven.

Ingredients

Directions

  1. In a 1 1/2-quart heat-resistant, non-metallic bowl, combine the unflavored gelatine, sugar, and salt.
  2. Drain the liquid from the canned peaches into a glass measuring cup.
  3. Add enough water to the peach juice to make 1 cup of liquid.
  4. Microwave the peach juice mixture on HIGH for 2 minutes or until boiling.
  5. Pour the hot peach juice mixture over the gelatine-sugar-salt mixture and stir until the gelatine is completely dissolved.
  6. Stir in the undiluted frozen lemonade concentrate.
  7. Refrigerate the mixture, stirring occasionally, until it is thickened to the consistency of unbeaten egg whites.
  8. Fold the whipped icy cold evaporated milk into the thickened lemon-peach mixture gently until well combined.
  9. Arrange the drained peach slices in the bottom of the prepared graham cracker crust.
  10. Pour the lemon chiffon filling over the peaches in the crust.
  11. Refrigerate for at least 4 hours or until firmly set before serving.

Note

Ensure the evaporated milk is very cold before whipping to achieve the best volume and stability for the chiffon texture.

The graham cracker crust should be fully baked and cooled before adding the filling to prevent it from becoming soggy.

If you do not have frozen lemonade concentrate, you can substitute with fresh lemon juice and a bit more sugar, but the flavor profile may vary slightly.

Store any leftovers in the refrigerator covered with plastic wrap. The pie is best consumed within 2-3 days.
