Lettuce Blossom
Description
This Lettuce Blossom recipe offers a fresh, low-carb twist on traditional Chinese stir-fries. The filling combines savory, soy-seasoned minced pork with crunchy water chestnuts, bamboo shoots, and diced vegetables, creating a delightful contrast of textures. The dish is aromatic and satisfying, perfect for a light weekend brunch or a healthy weekday lunch. Using crisp lettuce leaves as wrappers keeps the meal refreshing and vibrant.Directions
-
Rinse dry black mushrooms and soak in warm water for 20 minutes until softened. Drain, squeeze out excess water, and finely chop them.
-
In a small bowl, combine the minced pork, salt, sugar, and soy sauce. Mix well and let it marinate for 5 minutes.
-
Heat a wok or large skillet over high heat. Add the salad oil and swirl to coat the bottom.
-
Add the diced onion and garlic to the hot wok. Stir-fry for 30 seconds until fragrant.
-
Add the marinated pork to the wok. Break it apart with a spatula and stir-fry until cooked through and no longer pink, about 3-4 minutes.
-
Add the chopped mushrooms, water chestnuts, bamboo shoots, celery, carrots, and green peas to the wok.
-
Stir-fry all vegetables and pork together for 2-3 minutes until the vegetables are tender-crisp.
-
Drizzle the Chinese cooking wine down the side of the wok to deglaze. Immediately add the sesame oil, chopped peanuts, and pepper.
-
Toss everything together for another 30 seconds to combine flavors. Remove from heat.
-
Separate the lettuce leaves and rinse them gently. Pat dry with paper towels.
-
Spoon the hot filling into the center of each lettuce leaf to create a 'blossom' shape. Serve immediately.
