  1. Sprinkle the stewing hen pieces with 1.5 teaspoons of salt.
  2. Melt the shortening in a large, heavy-bottomed pot over medium heat.
  3. Add the chicken pieces to the pot and brown them on all sides, about 15 minutes total.
  4. Remove the browned chicken from the pot and set aside.
  5. Stir the flour into the hot fat remaining in the pot to create a roux.
  6. Cook the roux, stirring constantly over low heat, until it reaches a dark chocolate brown color.
  7. Immediately add the chopped onion, celery, and green bell pepper to the roux to stop the cooking process.
  8. Stir in the thyme, remaining salt, black pepper, and Worcestershire sauce.
  9. Return the chicken to the pot and add enough water to cover the ingredients by one inch.
  10. Bring to a boil, then reduce heat to low, cover, and simmer for 1 to 1.5 hours until the chicken is tender.
