Description

This classic New York-style cheesecake delivers an intensely creamy texture and a sophisticated balance of sweet and tangy flavors. The dense, velvety filling is made with high-quality cream cheese, eggs, and a hint of citrus, resulting in a luxurious dessert that holds its shape beautifully. The buttery, slightly sweet crust provides the perfect structural foundation and textural contrast. Ideal for birthdays, holidays, or any occasion calling for an indulgent treat, this cheesecake is a showstopper that tastes even better when made a day ahead to allow the flavors to fully set and mature.

Ingredients

Directions

  1. Preheat oven to 400 degrees F (200 degrees C).
  2. In a bowl, combine flour, sugar, lemon peel, and vanilla.
  3. Make a well in the center of the dry ingredients.
  4. Add the egg yolk and softened butter to the well.
  5. Mix with your fingers until a smooth, consistent dough forms.
  6. Press half of the dough evenly onto the bottom of a springform pan.
  7. Bake the crust for 6-8 minutes, then remove from oven.
  8. While the crust is still warm, press the remaining dough up the sides of the pan to form a 2-inch high border.
  9. Increase oven temperature to 450 degrees F (230 degrees C).
  10. Place a roasting pan filled with hot water on the bottom rack of the oven to create a water bath.
  11. In a large bowl, beat softened cream cheese until smooth and creamy.
  12. Gradually add sugar and cornstarch to the cream cheese, beating until combined.
  13. Mix in lemon peel, orange peel, and vanilla extract.
  14. Add eggs and egg yolks one at a time, beating just until incorporated.
  15. Fold in heavy cream until the batter is smooth and uniform.
  16. Pour the filling into the prepared crust.
  17. Place the springform pan into the roasting pan in the oven, ensuring hot water comes halfway up the sides of the pan.
  18. Bake for 1 hour, or until the center is almost set but still slightly jiggly.
  19. Turn off the oven and crack the door open slightly. Let the cheesecake cool in the oven for 1 hour.
  20. Remove from oven and run a knife around the edge to loosen. Cool completely on a wire rack.
  21. Refrigerate for at least 4 hours or overnight before serving.
