Description

This luxurious Lobster American Sauce transforms simple ingredients into a restaurant-quality centerpiece. By utilizing the lobster shells, you extract a deep, savory essence that forms the backbone of this velvety sauce. Aromatic shallots and garlic provide a fragrant base, while a splash of brandy adds complexity and a subtle smoky note. The sauce is finished with heavy cream and butter, creating a smooth, luxurious texture that coats every bite. It pairs beautifully with lobster tails, scallops, or rich pasta dishes like linguine or fettuccine. Ideal for date nights, special celebrations, or when you want to elevate a standard seafood dinner into something truly memorable.

Ingredients

Directions

  1. Crack the lobster shells into small pieces to maximize surface area for flavor extraction.
  2. Heat olive oil and 1 tablespoon of butter in a sauté pan over medium-high heat until smoking.
  3. Add the lobster shells and sauté for 2-3 minutes until they turn bright red and fragrant.
  4. Add minced shallots and garlic, sautéing for 1 minute until softened but not browned.
  5. Stir in the tomato purée and cook for 1 minute to deepen the flavor.
  6. Pour in the brandy and carefully flambé, allowing the flames to subside.
  7. Add shrimp or fish stock and white wine, scraping up any browned bits from the bottom of the pan.
  8. Bring the liquid to a boil, then reduce heat and simmer for 15 minutes to extract flavor from the shells.
  9. Remove the pan from heat and strain the liquid through a fine chinois into a sauce pot, discarding the solids.
  10. Whisk in the heavy cream and bring the mixture back to a gentle boil.
  11. Reduce heat and simmer for 2-3 minutes until the sauce slightly thickens.
  12. Remove from heat and whisk in the remaining 3 tablespoons of butter to mount the sauce.
  13. Season with salt, pepper, and cayenne pepper to taste.
  14. Stir in chopped parsley just before serving.

Note

Use fresh lobster shells for the best flavor; frozen shells may yield a less vibrant result.

If you do not have shrimp or fish stock, you can use water with a bouillon cube or additional white wine.

Be cautious when flambéing; have a lid nearby to smother any unexpected flare-ups.

This sauce is best served immediately. If reheating, do so gently over low heat to prevent the cream from separating.

Adjust the cayenne pepper according to your preference for heat; a little goes a long way.
