Ingredients

Directions

  1. Peel the Jerusalem artichokes and slice them thinly and evenly.
  2. In a large skillet over medium heat, melt butter together with olive oil.
  3. Season the fish fillets with salt and pepper, then place them in the hot skillet.
  4. Sear the fish for about 3 minutes on each side, or until golden brown and cooked through.
  5. Remove the fish from the skillet and set aside on a plate, keeping it warm.
  6. Pour the white wine into the same skillet, scraping up any browned bits from the bottom with a wooden spoon.
  7. Add the chopped rosemary, lemon juice, sliced Jerusalem artichokes, heavy cream, salt, and pepper to the skillet.
  8. Bring the mixture to a gentle simmer and cook until the Jerusalem artichokes are tender and the sauce has reduced by half, stirring occasionally, for about 20 to 30 minutes.
  9. Transfer the seared fish fillets to serving plates.
  10. Spoon the creamy Jerusalem artichoke sauce generously over the fish.
  11. Garnish with fresh rosemary sprigs before serving.

Note

Jerusalem artichokes, or sunchokes, have a nutty, sweet flavor similar to artichoke hearts but with a texture closer to a potato. They do not need to be soaked in water to prevent browning like regular potatoes.

If you cannot find Jerusalem artichokes, you can substitute them with regular artichoke hearts (fresh or jarred) or even sliced potatoes, though the flavor profile will differ slightly.

For a lighter version, you can substitute half-and-half or whole milk for the heavy cream, but the sauce will be less rich.

Make sure to slice the artichokes uniformly so they cook evenly. A mandoline slicer works well for this task.

If the sauce becomes too thick during reduction, add a splash of fish stock or water to reach the desired consistency.
