Ingredients

Directions

  1. In a large heavy-bottomed pot, combine 3 tablespoons of oil and flour over medium heat to make a roux, stirring constantly until it reaches a dark brown color, resembling peanut butter.
  2. Add 2 pounds of shrimp to the roux and cook for a few minutes until they begin to turn pink, then set the mixture aside.
  3. In the same pot, add 2 tablespoons of oil and sauté the chopped okra and onions until the okra is almost done and the onions are softened.
  4. Add the canned tomatoes and minced garlic to the pot and cook for a few minutes longer until the tomatoes break down.
  5. Pour in 2 quarts of water and season with salt and black pepper to taste, bringing the liquid to a gentle simmer.
  6. Return the shrimp and roux mixture to the pot and simmer for about 10 minutes to allow flavors to meld.
  7. Add 1/2 pint of oysters, 1 can of crabmeat, and any whole crabs, simmering until the crabs are cooked through and the oysters are plump.
  8. Stir in 1/2 cup of finely chopped parsley and 1/2 cup of finely chopped scallion tops, and simmer for another 15 to 20 minutes.
  9. Ladle the hot gumbo over steamed white rice and serve, allowing each person to add fresh file powder to their taste.
