Description

This classic Macaroni & Cheese Bake is the ultimate comfort food, perfect for family dinners or potlucks. It features tender macaroni noodles enveloped in a velvety, homemade cheese sauce made with skimmed milk, margarine, and sharp cheeses. The dish is topped with a crunchy mixture of whole wheat bread crumbs and Parmesan cheese, which turns golden brown under the broiler. Balanced with a hint of dry mustard and hot sauce, it offers a savory depth that complements the richness of the cheese.

Ingredients

Directions

  1. Preheat oven to 375F (190C).
  2. Bring a large pot of salted water to a boil and cook the macaroni according to package directions until al dente.
  3. Drain the macaroni and set aside.
  4. In a saucepan, melt the margarine over medium heat.
  5. Stir in the flour and cook for 1 minute to create a roux.
  6. Gradually whisk in 2 cups of the skimmed milk, continuing to whisk until the sauce thickens and smoothens.
  7. Remove from heat and stir in the dry mustard, pepper, hot sauce, and shredded cheddar cheese until melted.
  8. In a large bowl, combine the cooked macaroni, green onions, and remaining 1/4 cup milk.
  9. Pour the cheese sauce over the macaroni mixture and toss gently to coat evenly.
  10. Transfer the mixture to a greased baking dish.
  11. In a small bowl, mix the whole wheat bread crumbs, Parmesan cheese, and paprika.
  12. Sprinkle the breadcrumb mixture evenly over the top of the macaroni.
  13. Bake for 20 minutes, or until the top is golden brown and the sauce is bubbly.

Note

For a richer flavor, you can substitute butter for the margarine.

If you prefer a crispier topping, broil for the last 2-3 minutes, watching closely to prevent burning.

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or microwave.

You can add cooked bacon, broccoli, or ham to the macaroni for extra flavor and texture.
