Ingredients

Directions

  1. Preheat oven to 325ðF (165ðC). Lightly oil a standard loaf pan.
  2. In a large bowl, cream together the margarine, sugar, and eggs until smooth and well combined.
  3. In a separate bowl, whisk together the flour and baking powder.
  4. Add the dry ingredients to the wet mixture alternately with the milk, beginning and ending with the flour mixture. Mix until just combined.
  5. Stir in the finely grated lemon rind and ground walnuts.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 45 minutes, or until a toothpick inserted into the center comes out clean.
  8. Remove from the oven and immediately prick the top of the warm bread all over with a toothpick.
  9. In a small bowl, mix 1/3 cup sugar with the juice of the lemon. Brush this glaze over the warm bread.
  10. Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
