  1. Grind the calf liver through the finest holes of a meat grinder.
  2. In a saucepan, sauté the grated onion in 1 tablespoon of lard for a few minutes until softened.
  3. Add the ground liver and salt to the pan, cover, and cook over very low heat for 5 minutes.
  4. Pour in the white wine and let the mixture simmer for a few minutes.
  5. In a separate pot, bring the chicken broth to a gentle simmer.
  6. Add the liver and wine mixture to the simmering broth, along with the black pepper.
  7. In a separate small frying pan, melt 1 teaspoon of lard and stir in the flour to make a roux.
