Description

This classic Louisiana boudin is a hearty, savory sausage made from tender pork butt and liver, seasoned with garlic, peppers, and spices, then mixed with fluffy cooked rice. The combination of meaty richness and the soft texture of rice creates a unique, comforting bite that is distinct from traditional European sausages. It is a staple of Cajun cuisine, perfect for casual gatherings, tailgates, or a simple Sunday dinner. While it requires some patience to simmer and stuff, the result is deeply flavorful and satisfying. Serve hot from the casing for the best experience.

Ingredients

Directions

  1. In a large saucepan, combine the pork butt, pork liver, water, onions, garlic, bell peppers, celery, 1 teaspoon salt, 1/4 teaspoon cayenne, and 1/4 teaspoon black pepper.
  2. Bring the liquid to a boil over high heat, then reduce the heat to maintain a gentle simmer.
  3. Simmer the mixture for 1 1/2 hours, or until the pork and liver are completely tender.
  4. Remove the pan from the heat. Drain the mixture, reserving exactly 1 1/2 cups of the cooking broth.
  5. Grind the cooled pork and liver mixture using a meat grinder fitted with a 1/4-inch die.
  6. Transfer the ground meat mixture into a large mixing bowl.
  7. Stir in the cooked rice, remaining 3 1/4 teaspoons salt, 2 1/4 teaspoons cayenne, 1 1/4 teaspoons black pepper, 1/2 cup parsley, and 1/2 cup green onions.
  8. Add the reserved broth, 1/2 cup at a time, mixing thoroughly until the mixture reaches a moist, pliable consistency.
  9. Using a sausage stuffer or a funnel, carefully stuff the mixture into the prepared casings.
  10. Tie off the ends of the casings and link the boudin into desired lengths.
