Ingredients

Directions

  1. Place tomato puree in a clear measuring jug.
  2. Slowly add water while mixing, until you have 8 fl oz of diluted tomato sauce.
  3. Stir in grated ginger, cream, garam masala, salt, sugar, chopped green chili, cayenne pepper, chopped coriander, lemon juice, and ground roasted cumin seeds into the tomato mixture. Mix well.
  4. Pour the prepared sauce mixture into the pan with the melted butter.
  5. Bring the sauce to a gentle simmer and cook for about 1 minute, stirring constantly to incorporate the butter.
  6. Add the cooked tandoori chicken pieces to the pan, discarding any accumulated juices from the chicken.
  7. Gently stir once to coat the chicken, then transfer the chicken pieces to a warm serving platter.
  8. Spoon the remaining sauce generously over the chicken.

Note

For best results, use freshly cooked tandoori chicken or marinated grilled chicken. If unavailable, boneless chicken thighs can be marinated in yogurt and spices, then grilled.

Adjust the amount of green chili and cayenne pepper to suit your preferred heat level.

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stove, adding a splash of water or cream if the sauce thickens.

Serve with warm naan bread, roti, or basmati rice to complement the rich sauce.
