  1. Bring the chicken broth to a boil in a saucepan.
  2. Stick one small onion with the cloves and add it to the boiling broth along with the remaining onions and the tarragon or thyme.
  3. Reduce heat and simmer for 10 minutes, or until the onions are soft.
  4. Season 2 chicken breasts (split, skinned) with salt and pepper.
  5. Place 2 tablespoons of flour seasoned with salt and pepper in a brown bag and shake the chicken breasts in it to coat evenly.
  6. Heat 2 tablespoons of butter and 2 tablespoons of oil in a large skillet over medium-high heat.
  7. Brown the coated chicken breasts well on both sides in the skillet.
  8. Add the simmered onions and their broth to the skillet with the chicken.
  9. Cover and cook gently for 20 minutes until the chicken is cooked through.
  10. Meanwhile, in another pan, sauté 1/2 lb sliced mushrooms and 2 minced cloves of garlic in the remaining 2 tablespoons of butter and oil.
  11. Add the remaining 2 tablespoons of flour to the mushroom pan, season with salt and pepper, and stir to form a smooth paste.
  12. Stir in 1 cup of light cream and cook, stirring constantly, until the sauce is smooth and thickened.
  13. Remove the chicken and onions from the skillet to a platter and keep warm.
  14. Pour the remaining chicken broth from the skillet into the cream sauce, stirring constantly until smooth and heated through.
  15. Correct seasoning if necessary and pour the sauce over the chicken.
  16. Serve immediately. Note: This dish can be made ahead; keep chicken and sauce separate and reheat gently before combining.
