-
Heat lard in a large pot or Dutch oven over medium-high heat. Brown the turkey pieces on all sides, then remove and set aside.
-
Pour off excess fat, leaving about 2 tablespoons in the pan. Add the chopped ancho, pasilla, and serrano chiles, almonds, and sesame seeds. Fry until fragrant and the almonds are lightly toasted, stirring frequently.
-
Transfer the fried chile and nut mixture to a blender. Blend until smooth to create a puree.
-
In the same pot used for the turkey, fry the chopped chorizo until browned and cooked through. Remove the chorizo and set aside with the turkey.
-
In the remaining fat, cook the sliced onions until soft and translucent.
-
Add the blended chile puree, chopped tomatoes, and cinnamon powder to the onions. Cook for a few minutes, stirring constantly, until the mixture thickens slightly.
-
Transfer the onion and sauce mixture to a large casserole dish or return it to the large pot if it has enough space.
-
Stir in the turkey or chicken stock, sugar, cider vinegar, and salt. Taste and adjust seasoning as needed.
-
Add the browned turkey pieces, cooked chorizo, pineapple chunks, apple slices, and banana slices to the pot.
-
Bring to a simmer, then cover and cook gently for 45 minutes to 1 hour, or until the turkey is tender and the flavors have melded.
