Description

This traditional Mandeltorte is a decadent almond cake that balances a crisp, buttery shortbread crust with a soft, moist almond filling. The flavor profile is intensely nutty and sweet, brightened by a layer of tart raspberry jam and finished with a delicate lemon-sugar icing. Its an elegant yet approachable dessert perfect for afternoon tea, holiday gatherings, or celebrating special occasions. The texture is dense but tender, offering a luxurious mouthfeel that pairs beautifully with black coffee or dessert wine. Made with ground almonds, fresh eggs, and real butter, this cake delivers authentic German baking heritage. Its a showstopper that looks impressive but relies on simple techniques, making it accessible for home bakers who want to create something truly memorable for their guests.

Ingredients

Directions

  1. Preheat oven to 350F (175C).
  2. For the crust: Sift together the flour, baking powder, and 1/3 cup of the sugar.
  3. Cut 1/2 cup of the softened butter into the dry ingredients using a pastry blender or fork until the mixture resembles coarse cornmeal.
  4. Lightly beat 1 egg and stir it into the flour mixture until a dough forms.
  5. Press the dough evenly into the bottom of a 9-inch round cake pan or tart pan.
  6. For the filling: In a separate bowl, beat the remaining 1/2 cup softened butter with the remaining 1/3 cup sugar until light and fluffy.
  7. Beat in the remaining 2 eggs, one at a time, ensuring each is fully incorporated before adding the next.
  8. Stir in the ground almonds and almond extract until well combined.
  9. Pour the almond filling over the prepared crust in the pan.
  10. Bake for 30 to 35 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
  11. Remove from oven and let the torte cool in the pan for 1 hour.
  12. Spread the raspberry jam evenly over the cooled torte.
  13. Mix the sifted powdered sugar with the fresh lemon juice to form a smooth, spreadable icing.
  14. Transfer icing to a pastry bag fitted with a small tip and pipe decorative designs over the top of the torte.

Note

Ensure the butter for the crust is cold enough to cut in easily but soft enough to blend. For the filling, the butter should be room temperature to cream properly with the sugar.

Do not overmix the almond filling after adding the eggs and almonds to maintain a tender texture.

If you do not have a pastry bag, you can use a small spoon or a zip-top bag with the corner snipped off to pipe the icing.

Store leftovers covered at room temperature for up to 2 days, or in the refrigerator for up to 5 days. Bring to room temperature before serving for best flavor.

You can substitute the raspberry jam with apricot or cherry jam for a different flavor profile.
