Description

Mango Kulfi is a luxurious, traditional Indian frozen dessert that offers a richer, creamier texture than standard ice cream. This recipe relies on ripe mangoes for a vibrant, natural sweetness, balanced by a hint of lemon juice to brighten the flavor profile. The addition of gelatin ensures a smooth, scoopable consistency without the need for an ice cream maker. It is an elegant yet simple treat, perfect for warm summer evenings or as a sophisticated end to a festive meal. The dense, velvety texture pairs beautifully with the crunch of roasted pistachios, making it a memorable experience for guests and family alike.

Ingredients

Directions

  1. Place water in a small saucepan and sprinkle gelatin over the surface.
  2. Allow the gelatin to soften for five minutes.
  3. Cook over low heat, stirring gently, until the gelatin is completely dissolved.
  4. Peel and pit the mangoes, then puree the flesh in a blender or food processor until smooth.
  5. Place the mango puree in a large bowl and add the sugar, lemon juice, and dissolved gelatin mixture.
  6. Stir vigorously until the sugar is fully dissolved and the mixture is well combined.
  7. Gently fold the whipped cream into the mango mixture until no white streaks remain.
  8. Place the bowl in the freezer for about one hour, or until the mixture is half frozen.
  9. Remove from the freezer and beat the mixture with a whisk or electric mixer until it is smooth and creamy again.
  10. Pack the mixture into individual bowls or molds.
  11. Return to the freezer and freeze until firm, about 4 to 6 hours.
  12. Garnish with ground roasted pistachio nuts before serving.

Note

For best texture, use very ripe mangoes such as Alphonso or Ataulfo varieties for maximum sweetness and aroma.

If you do not have whipped cream on hand, you can whip heavy cream to stiff peaks before folding it in. Ensure the cream is cold for best results.

To remove kulfi from molds, dip the bottom of the mold in warm water for 10-15 seconds before unmolding.

Store leftover kulfi in an airtight container in the freezer for up to two weeks. Allow to thaw at room temperature for 5-10 minutes before serving for a softer texture.

You can substitute pistachios with crushed almonds or cardamom powder for a different flavor profile.
