Marbled Cheesecake Brownies
Description
These marbled cheesecake brownies offer the best of two worlds: the dense, fudgy richness of a classic chocolate brownie and the tangy, creamy smoothness of New York-style cheesecake. The batter is infused with a hint of instant coffee to deepen the chocolate flavor, while the cheesecake layer provides a bright contrast that cuts through the sweetness. Perfect for potlucks, holiday gatherings, or simply when you need a serious dessert fix, these bars are easy to make using standard pantry staples. The key is in the swirling technique, which creates a beautiful, rustic pattern in every slice. They hold up well at room temperature, making them ideal for serving alongside coffee or tea.Directions
-
Preheat oven to 350°F (175°C).
-
Lightly oil an 8x11.5-inch baking pan or coat with nonstick cooking spray, then dust with flour, tapping out the excess. Set aside.
-
Make the cheesecake topping: In a medium bowl, beat cream cheese with an electric mixer at medium speed until smooth and creamy, about 1 minute.
-
Beat in the sugar and 1/2 teaspoon vanilla until very smooth, 2 to 3 minutes.
-
Beat in 1 egg, followed by 1 egg white, mixing for 2 to 3 minutes to thoroughly blend.
-
Add 1 tablespoon cake flour and beat on low speed just until blended. Set aside.
-
Make the brownie batter: In a small bowl, whisk together 1 cup cake flour, cocoa powder, and salt.
-
In a large bowl, beat brown sugar, canola oil, buttermilk, 1 egg, 2 egg whites, instant coffee granules (if using), and 2 teaspoons vanilla on high speed until smooth and no lumps remain.
-
Add the dry ingredients to the wet mixture and beat on low speed just until blended.
-
Set aside 1/2 cup of the brownie batter in a small bowl.
-
Transfer the remaining brownie batter to the prepared pan, spreading it evenly into the corners and smoothing the surface.
-
Carefully pour the cheesecake topping over the brownie batter and spread it evenly to the edges.
-
Dot the cheesecake layer with the reserved 1/2 cup of brownie batter.
-
Using a table knife, gently swirl the brownie batter into the cheesecake layer to create a marbled effect. Do not over-mix.
-
Bake for 40 to 50 minutes, or until a toothpick inserted into the center comes out with moist crumbs but no wet batter.
-
Cool completely in the pan on a wire rack before cutting into bars.
